How to cook
In a small saucepan, filled with boiling salted water, put the broken up broccoli for 1-2 minutes to blanch and remove them with a slotted spoon.
In a deep frying pan, heat the oil and fry the two types of minced meat until they're cooked well and start to crumble. Add the finely chopped leeks, onions, diced carrots and the chopped red and green peppers. Stir frequently.
Once the vegetables are stewed, add the finely chopped garlic cloves and the peeled and diced tomatoes. Once the tomatoes have boiled, add the finely chopped broccoli, reduce the heat and simmer under the lid for ten minutes.
Sprinkle with finely chopped parsley and basil. Then season with as much salt and black pepper as you like and stir.
Turn off the stove and beat three or four eggs in the dish, depending on the portions. Cover the pan and wait a few minutes for the poached eggs.
The dish is served hot, with one poached egg in each portion.
