How to cook
Peel and wash the potatoes. Cook them whole with a pinch of salt and savory, just be careful not to overcook them. Chop the gherkins finely and strain them if possible.
Strain the potatoes and let them cool. Shred them in a bowl and season with salt.
Add the chopped gherkins, a wisked egg, breadcrumbs (5 tbsp) and mix all the ingredients together. Add more breadcrumbs if needed.
Scoop a tablespoon of the mix and form small croquettes with moist hands. Place them on a tray dusted with flour or a big plate.
When you have finished forming all the croquettes, roll them in flour and deep fry them, until they turn golden brown. Place them on a baking rack to strain the excess oil. Serve as a side dish to meat dishes.
