  • flour - 1 ½ cups
  • water - 2 cups, hot
  • yeast - 1 tbsp (15 g)
  • sugar - 3 tsp
  • salt - 1 tsp
  • oil - 1 tablespoon
  • butter - for greasing the pan and pancakes


Dissolve the yeast with 1 teaspoon of sugar and half a cup of cool water. Wait for it to rise. Mix the flour with a cup of cool water, the sugar and salt and add the effervescent yeast.

Add 1 tablespoon of oil and leave it in a warm place to rise. It needs to expand very well in volume and become bubbly. Preheat a well greased pan and pour in 1 large ladle of the dough. It needs to be at least 1/4″ (6 mm) thick. Once it becomes dry and shows little holes, flip the pancake.

Brush the ready pancakes with butter and serve with a sweet or salty garnish.
