Preheat the oven to 266°F (130 °C). Beat the egg whites to a fluffy snow with a pinch of salt and gradually add sugar to them while beating.
Then, thoroughly mix them with the vanilla, cinnamon and coconut flakes. Fill an icing piping syringe with a star-shaped nozzle and squeeze out small cookies onto a tray, covered with baking paper.
Place the German Christmas cookies with coconut to bake for about 1/2 hour.
