  • yogurt - 1 cup
  • baking soda - 1 tsp
  • sugar - 1 cup
  • flour - 2 cups
  • oil - 7 tablespoons
  • lemons - 1 lemon’s zest
  • fruits - optional, for sprinkling on top
  • nuts - 3.5 oz (100 g) crushed, optional


Dissolve the baking soda in a bowl with the yogurt and mix it with a fork, subsequently add the sugar, oil, flour, lemon zest and stir until everything is homogenized.

Put the mixture into a greased and lightly floured tray (not too large).

Top with fresh or frozen fruit (cut it, if necessary) and distribute the nuts. Put the easy spring cake to bake in a preheated 356°F (180 °C) oven for about 45 minutes.
