How to cook
Put the water to boil and drop the couscous in to boil. Meanwhile, beat the eggs and add the flour. Stir until homogeneous. Beat the yoghurt and add it to the mixture.
Once the couscous is cooked, add the mixture while stirring. Boil this for 5 minutes on low heat without a lid on. Melt a knob of butter and add a pinch of crushed spearmint to it.
Add this to the soup, stir and remove it from the heat. You can serve the Armenian soup with a little grated cheese or feta cheese.
