How to cook
The onions and peppers are cut into small pieces, but not too small. The mushrooms are cleaned and cut into small pieces.
Fry the onion and pepper in hot oil until the onion begins to turn translucent. Add the mushrooms and spices, mix well and fry them for another 5 minutes.
Add 1 cup of water and leave it covered to cook for 5-10 minutes.
Add the strained chickpeas and simmer until the water evaporates, or at least most of it.
To prepare the quinoa, add 2 cups of water in a saucepan to boil on the stove. Once it boils, add salt, the other teaspoon of coriander and the washed quinoa.
Reduce heat and simmer for about 15 minutes.
