How to cook
Season the minced fish with black pepper, salt and lemon juice. Leave it for half an hour to absorb the spices.
Fry the rice in the fat until it becomes translucent and salt it. Pour 3 cups of water over it and leave it on the heated hob for another 15 minutes until it steams.
Boil the potatoes and mash them. In a large bowl, mix the prepared products and add the eggs, yellow cheese and black pepper.
Knead the mixture thoroughly and form croquettes out of it. Roll them in flour and fry them in hot oil.
Optionally, garnish the croquettes with pickles and olives.
