Dip the bread in cold water. Peel the onion and chop it finely. Combine the mince, onion, oregano and ouzo. Sprinkle with salt and pepper.

Drain the middle of the bread, add it to the mixture and mix it well with your hands. Leave it in the fridge for half an hour. Shape the mixture into balls with a diameter of about 1 1/4″ (3 cm).

Arrange them on a double grill, without pressing them hard and bake them for 5 minutes on both sides.
