How to cook
Peel the potatoes, cut them into equal pieces and cook them until they soften. Strain well and leave them to cool down.
During this time, finely chop the onions and vegetables (of your choice) that you're going to use as a garnish for the lean potato patties.
Mash the potatoes with a fork, add flour, salt, black pepper, chopped parsley and savory herb.
Knead them like a dough and form 4 potato patties. The secret is to let them cool for 10-15 minutes in the refrigerator, so they can set, otherwise they will crinkle.
Heat oil in a pan and fry the lean patties on both sides until they're golden brown.
Serve them garnished with fresh vegetables.
