How to cook
The eggplant is cleaned and sliced. Salt them and leave them for 30-40 minutes, so that their bitter juice separates.
The mushrooms, garlic, tomatoes and onions are also cleaned and cut into large pieces.
Put everything into a baking pan and sprinkle the vegetables with spices, lemon juice and fat. Bake at 390°F (200 degrees) until the vegetables are fully cooked.
Finally, sprinkle the dish with pieces of the vegan cheese and leave it in the oven until it melts or crisps up a bit. The baked casserole is sprinkled with fresh dill.
