"The ideal cozonac needs to divided into strings. This is achieved via extended and persistent kneading or a centrifugal washing machine."

Ingredients

  • milk - 2/5 cup (100 ml)
  • yoghurt - 3 1/3 tbsp (50 ml)
  • eggs - 2 + 1 white, and the yolk for spreading
  • butter - 2 2/3 tbsp (40 g)
  • oil - 3 1/3 tbsp (50 ml)
  • sugar - 2/3 cup (150 g)
  • yeast - about 1 1/5 tbsp (17 g)
  • vanilla sugar - 2 packets
  • essence - 1/2 capsule, rum
  • oranges - zest of 1
  • flour - as needed
  • for the filling
  • raisins - 2/5 cup (100 g)
  • dried fruits - 3 oz (80 g) mix
  • walnuts - 3 1/3 tbsp (50 g) coarsely chopped
  • turkish delight - 1.5 oz (50 g), optional

How to cook

Pre-dissolve the yeast in the warm milk with a pinch of sugar. Once effervescent, add 3 cups of flour with the beaten eggs, sugar, yoghurt, remaining sugar, a pinch of salt, vanilla sugar, rum extract and orange peel to it. Begin to gradually add the flour and melted butter with the oil.

Add flour until you get a firm ball. Knead the dough well and let it rise in a warm place. Knead it again and let it rise in a covered greased bowl once again.

Divide it into 3 parts, form them into long wicks and weave them together, adding raisins, dried fruits, walnuts and pieces of Turkish delight between them.

When finished, place it in a greased form and let it rise again. Brush with beaten egg yolk and optionally sprinkle it with crystal sugar.

Put it to bake in a moderately heated oven.
