How to cook
Cut each pepper in half and remove the seeds. The halves are baked and peeled. (They can also be baked and peeled first, then divided into halves and cleaned of seeds.)
The spinach leaves are soaked in a bowl of hot water and when they soften, they are removed and dried on kitchen paper.
The halves of red peppers are spread apart, put the spinach leaves on them and cover with the yellow peppers. Sprinkle with parsley and roll into a tight roll.
Wrap in foil and refrigerate for 3 hours. Preheat the oven to 200 °C. The bread is cut into slices about 1 cm thick. Arrange in a tray, lightly spread with olive oil and add a little salt. Bake until golden brown (5-10 minutes).
