Crush the yeast in the flour, mix with 6 tablespoons of water. Leave it to rise for 10 minutes. Add salt, sugar, 4/5 cup (200 ml) of warm water, knead a dough and leave it for 15 minutes to rise.
Chop the bacon finely, grate the cheese, peel the tomatoes, remove their seeds and cut them into small pieces. Add all the products plus the spices to the dough and knead it again. Leave it to rise for 15 minutes.
Divide into 20 equal portions and shape balls from them. Lay out the bottom of a tray with baking paper, place the balls on it and leave them to rest for 10 minutes.
Smear with olive oil and bake in a preheated oven at 392°F (200 °C) for about 30 minutes, until golden.
