How to cook
Knead the crust by using the listed ingredients. Form a ball, wrap it in cling film and allow it to rest in the fridge for an hour.
Roll out the dough on a floured surface, place it in a quiche form, and cover with baking paper and coarse salt.
Preheat the oven to 360°F (180 degrees) and bake for 15 minutes covered with the baking paper and salt. Remove them and bake for five more minutes.
Saute the mushrooms with a drizzle of olive oil. Beat the egg yolks, cream, salt and pepper. Sprinkle with the grated yellow cheese.
Add the mushrooms, as well as, the egg yolk and cream mix to the crust and bake for around 40 minutes.
Let the quiche cool a little before you cut it.
