How to cook
Boil the eggs for 12 minutes. Put them in cold water and after they cool, peel them.
Cut them in half. Separate the yolks in a separate bowl.
Add the peeled and sliced avocado to them and drizzle it with lemon juice.
Mash with a fork. Season with salt. Add the mustard and mix well until you have a smooth mixture.
Fill the egg white halves with it. Sprinkle them with dry parsley.
