How to cook
Boil the cauliflower, which you have chopped into small pieces, in salted water.
Mash it once it is cooked and separately make a mixture of butter and flour. Dilute it with little of the cauliflower water.
Season it with salt, ground black pepper, a little chopped parsley and grated yellow cheese. Return the mixture to the remaining cauliflower and stir.
Boil the mixture for a while and thicken the soup with beaten eggs and yogurt.
