  • corn flour - 1 4/5 cups (450 g) or rice flour + some for sprinkling
  • yeast - 1 1/3 tsp (7 g) dry
  • salt - 2 tsp
  • sugar - 2 tsp
  • oil - 1 tablespoon
  • water - hot 1 1/5 cups (300 ml)

Dissolve the yeast in warm water with the sugar. Cover and leave them for about 5-10 minutes until they form bubbles. Add the sifted flour in stages. Knead an elastic dough (10-15 minutes), and finally add the oil and salt.

Place the dough in a greased bowl and cover it. Leave it to rise in a warm place for 40 minutes or until increased in volume twice.

Split the dough into 10 portions of 3 oz (80 g) and form them into buns. Put the buns in a tray laid out with baking paper. Optionally, sprinkle them with corn or rice flour, and cover. Let them rest for about 30 minutes. Bake in a preheated oven at 446°F (230 °C) for 5-6 minutes.

Then reduce the oven to 392°F (200 °C) and bake for 10 minutes until golden in color.
