How to cook
Place the butter and olive oil into a big pot, and heat at moderate to high temperature. Add a few kernels, and once they start popping add the rest. Cover the pot with a lid.
Shake the pot from time to time. When the popping slows, it means you are ready to set it aside.
Before you start preparing the caramel sauce, preheat the oven to 210°F (100 degrees). Heat the butter in a nonstick pan and add the sugar and honey.
Let the mix simmer on low heat, until you have a caramel coloured sauce. Remove from the stove and add the baking soda, salt and vanilla powder.
Arrange the popcorn on a baking tray covered with parchment paper and pour the caramel on top.
Give them a good toss and place the tray into the oven, as quickly as you can. Bake the Caramelised popcorn for approximately 40 minutes.
