How to cook
Clean the zucchini, cut them into 2 lengthwise and carve out the halves. Arrange the gondolas in a slightly greased pan, sprinkle them with salt, black pepper and a little white pepper, add a trickle of oil and bake in a warm oven until slightly tender.
Meanwhile, fry the chopped insides of the zucchini with the finely chopped red pepper and tomato (only the hard part). Add the mince and stir until fried, then until the water evaporates. Season them with spices to taste.
Fill the zucchini and put them to toast in the oven. While still hot, sprinkle with grated cheese and serve.
