Season the chicken with salt, pepper, thyme and a little olive oil and let it season for 1/2 hour. During this time, clean the mushrooms and cut them into slices. Preheat oil in a deep pan and put the mushrooms to sauté.
When soft, flavour them with spices, add the cream and processed cheese and stir for a few minutes. Remove it from the heat, add the grated blue cheese and stir again. Optionally, roast the chicken meat on a grill, or fry it. Serve the chicken topped with the cream sauce.
Sprinkle the top with finely chopped parsley and garnish with a slice of lemon.
