How to cook
Beat the egg whites with the sugar and ground walnuts in an enamel or glass container in a water bath on the stove. Initially, whisk the mixture at high heat until warm, then on low until thickened.
Remove the mixture from the heat and flavor it with vanilla. Once well cooled, shape it with wet hands into balls the size of walnuts.
Arrange them on a tray with baking paper and put 1 almond in each if you like. Bake in a moderately heated oven to pinking.
