  • wheat - 4/5 cup (200 g) crushed, hard
  • sugar - 2/5 cup (100 g)
  • walnuts - 3 1/3 tbsp (50 g), chopped
  • raisins - 3 1/3 tbsp (50 g)
  • rose water - 2 tsp (10 ml)
  • cinnamon - 1/2 tsp
  • starch - 3 tsp, white
  • jam - from blackberries and strawberries

Clean the wheat, wash it and let soak for several hours in cold water. Boil in the same water over low heat until completely soft. Set aside about 1/3 of it, pass the remaining grain through a strainer and pour the wheat slush over it.

To the resulting boiling mixture, add the starch, diluted with a little cold water, the sugar and the set aside boiled wheat grains. Simmer the mixture on low heat to thickening, then add the raisins and rose water.

Distribute it into molds, sprinkle the top with chopped walnuts and cinnamon. Once cooled and gelled, serve with a spoon of strawberry and blackberry jam.
