How to cook
The brown rice is soaked from the night before. Strain it the next day and wash it well.
Heat oil in a pot and fry the finely chopped onions, carrots, peeled and cut into pieces. Once stewed, add the rice and fry it, while stirring with a wooden spoon. Add the grated tomato, paprika and stir and pour hot water in a ratio of 1:3.
Season with a little salt, black pepper and oregano. Allow it to simmer for 10 minutes. Turn it off and transfer the rice mixture into a baking pan. Distribute the olives on top.
Place the rice in the oven and turn it on to 356°F (180 degrees) and bake it for 1 hour until the rice is ready.
Serve the oven-baked rice with fresh parsley. Tasty and healthy!
