How to cook
In a plate, mash the banana with a fork. Beat the egg along with the egg white and pour the mixture over the banana.
Weigh the required amount of oatmeal (if you do not have a kitchen scale, you need approximately 1/2 cup of oatmeal) and add it to the rest. Blend everything with a blender until a smooth and slightly liquid like mixture is obtained.
I make the pancakes on a Teflon pan and I don't add fat, but if your pan sticks, you better grease it with some olive oil.
The quantity is for 3 pancakes.
I sprinkle them with cinnamon when they are ready, but you can add it to the mixture itself.
