How to cook
Put the ayran to get heated in a pan on the stove and right before it boils, add the semolina and stir. Once swollen, add 1 tsp grated lemon rind, the vanilla and sugar to taste. Remove from the heat and let it cool.
Then add the beaten egg yolks and stir it with them. Separately, beat the egg whites to snow and finally stir them into the mixture.
Pour 1/3 of the pie mixture into a buttered baking dish, distribute half of the cherries, sprinkle them with sugar, then the semolina mixture again, the remaining cherries, sugar and finally, the last of the semolina.
Top with small pieces of butter and put the tray to bake until the pie browns in a moderately warmed oven.
