How to cook
Press the hard-boiled yolks through a thick sieve. Add 2 raw egg yolks to them and stir with a wooden spoon until you have a smooth mixture. Of course, you can also use a mixer.
While constantly beating or stirring, slowly add the olive oil in a thin stream along with the vinegar and add one by one the remaining yolks, lemon juice and milk.
Finally, season the mayonnaise with salt and black pepper. If desired, a clove of crushed garlic and your favorite fresh spices can be added to the mayonnaise.
