How to cook
Pre-peel the zucchini and finely chop them. Grate the carrots and cut the onion into small pieces.
Put the olive oil in a pan and add the zucchini first and then the grated carrot and finally, the tomato puree.
Stir well and leave it like that until the water from the zucchini evaporates.
Add the spices and remove it from the heat.
Add the cooked quinoa to the vegetables and mix everything well.
