How to cook
Cut 1 onion head into fine crescents and rub with some salt, then cut the other onion head into round slices. Cut the tomatoes into large cubes. Successively place the eggplants, peppers, seasoned beans, sweet corn, tomatoes, salted onions and parsley in the salad.
Season it with olive oil, a little vinegar and salt and mix very well. Before serving, add the round onion slices.
