Ingredients

  • eggplants - 2 medium
  • peppers - 5, red
  • beans - 1 cup boiled, old
  • corn - 1 cup, sweet
  • tomatoes - 4
  • onions - 2 heads
  • parsley - 1 bunch
  • oregano - pinch, dried
  • salt
  • olive oil
  • vinegar - for salads

How to cook

Bake the eggplants and peppers, clean and cut them into slices. Season the boiled beans with oregano, a little olive oil, salt and vinegar.

Cut 1 onion head into fine crescents and rub with some salt, then cut the other onion head into round slices. Cut the tomatoes into large cubes. Successively place the eggplants, peppers, seasoned beans, sweet corn, tomatoes, salted onions and parsley in the salad.

Season it with olive oil, a little vinegar and salt and mix very well. Before serving, add the round onion slices.
