"If this is the kind of yummy salad shepherds eat, I might just grab a shepherds crook and head to the plains."

Ingredients

  • lettuce - 2 leaves, for the bed
  • tomatoes - 1
  • cucumbers - 1/3, large
  • peppers - 1 red, small
  • onions - 1/3 head
  • mushrooms - 3
  • bacon - 3.5 oz (100 g)
  • lemon juice - from 1 lemon
  • oil - 1/5 cup (60 ml)
  • salt
  • black pepper
  • feta cheese - 5.5 oz (150 g)
  • parsley - 3 bunches
  • olives - 5 - 6

How to cook

Cut the cleaned mushrooms finely and grill on a grill pan, pouring a little oil, salt and black pepper over them. When tender, take them out and in the same pan grill the chopped bacon for a short while. You can grill the bacon first, then the mushrooms, if so desired.

In a plate, place 2 lettuce leaves as a bed. Top with pieces of tomatoes, cucumbers and peppers. Top with mushrooms, bacon and the onion, cut into thin crescents.

Sprinkle the salad with salt and black pepper and pour oil and lemon juice generously over it. Distribute feta cheese cubes, olives and parsley sprigs before serving.
