Ingredients

  • basmati rice - 1 cup
  • corn - 1/2 cup frozen
  • peas - 1/2 cup frozen
  • carrots - 2
  • peppers - 2 red + 2 green
  • onions - 1 head
  • garlic - 2 - 3 cloves
  • basil - 4 - 5 leaves
  • beef tenderloin - 17.5 oz (500 g), or use chicken
  • pine nuts - 3 1/3 tbsp (50 g)
  • olive oil - 2 tablespoons
  • black pepper - to taste

How to cook

Wash the rice and boil it. Clean the beef from its membranes and cut it into pieces. Roll the meat lightly in black pepper and put it to toast evenly on a grill pan until ready. Cut the red and green peppers into small pieces and wash and finely slice the carrots.

Steam cook for 5 min, then add the frozen corn and peas, washed only with cold water. After 2 min, remove the vegetables from the heat. Heat olive oil in a deep pan and add the chopped onion, beef, vegetables and cooked rice.

Leave on the stove for 10 minutes, stirring periodically. Serve with finely chopped basil and pine nuts.
