How to cook
Clean apricots well and remove their pits. Sprinkle them with the sugar in a tray and leave them to sit for at least 12 hours. After, pour vinegar over them and put them to bake in a moderate oven. Occasionally stir the mixture.
Towards the end of cooking, when the jam is almost done, add the chopped walnuts and stir. Once the syrup thickens, the apricot jam is ready.
Put it in jars, close them immediately and turn them with their cap down. Do not sterilize. Store the jam in a cool, dark place.
