From this mixture, you get about 9-10 medium sized pancakes. For the cream, boil the starch and milk, take it off the heat, add the clarified butter and mix until the cream fully absorbs it. Leave it to cool. Put the walnuts in.
Whip the confectionery cream well and add it to the cooled cream, stir gently. Once each pancake is cooled well, put a little cream and roll it, then garnish with topping.
