I really liked this zucchini and spring onion omelette idea from my friend, for which I want to thank her!
I fried the green onion stalks, the sliced zucchini and 4 roasted red peppers in a pan with oil and butter! I fried them until they softened.
I seasoned them with black pepper, salt and dill.
As they softened slightly, I added 6 beaten eggs and left them on a low heat, for about 20 minutes, until the eggs thickened.
Using a plate, I turned the omelette, placed it back in the pan and fried it on the other side!
It is tasty!
