Peel and clean the potatoes and cut them into coarse pieces. Salt and sprinkle them with black pepper to taste. Lay out a tray with aluminum foil, spread out the potatoes and pour olive oil over them.
If you have some left over, pour it on top. Put them to bake in a preheated 392°F (200 °C) oven, while pouring the sauce over them a few times. Sprinkle the cooked glazed potatoes with fresh chopped parsley.
