Beat the eggs with the sugar until white. Add the cottage cheese and baking soda and beat until the mixture becomes smooth. Gradually add the butter, flour, coconut flakes, essence and lemon zest. Finally, mix with the jam.
Pour the mixture into a greased and floured tray with a diameter of about 8″ (20 cm). Spread some fruits, drained from the jam, on top. Bake in a preheated moderate oven until ready.
The finished cake can be glazed with a bit of the jam or sprinkled with powdered sugar.
