How to cook
Peel and cut the onions and peppers into cubes. Cut the chicken into small pieces.
Heat the oil in a large and deep pan on the hob. Add the meat and fry it until it changes its color for about 10 minutes, while stirring occasionally.
Add the onions and peppers and fry them for another 5 minutes. Add the chili powder, black pepper, corn and rice. Cook them for about 5 minutes, while stirring and adding the broth.
Stir well, reduce the heat and cover the dish with a lid. Allow the dish to cook for about 25-30 minutes until the rice is fully cooked.
Before serving it, sprinkle the rice with grated cheese and leave it for 2-3 minutes to melt.
