Chop the onions and leeks very finely or grate them. Combine them with the minced meat, eggs, the bread that has been soaked with water and well drained, chopped parsley, grated cheese and seasonings to taste. Knead the minced meat very well.
Leave the minced meat to stand for 30 minutes in the refrigerator, and cover the container with foil. Then with greased hands, shape meatballs and keep them in the refrigerator until it's time to bake them.
Arrange them in a tray with baking paper and bake in a moderately heated oven. You can bake them on a grill as well. Serve these meatballs and cheese with salad.
