How to cook
The onion is finely chopped and stewed in butter. Add the rice and a little hot water. When the rice swells up, season it with salt, sprinkle it with black pepper and chopped parsley.
Fill the chicken with 2/3 of the mixture, sew it and put in a deep pot to boil. When the meat is almost cooked, remove it from the heat.
Pour the remaining stuffing into a baking pan and place the chicken on top. Pour a little of the broth and bake it in a moderately heated oven.
