How to cook
Mix the stuffing of 4 eggs, salt, white cheese and yogurt.
Wash, strain and finely chop the spinach in a separate bowl.
Mix the oil and butter in a suitable bowl and melt it on a heated hob.
In a baking pan, arrange the filo pastry sheets by first greasing with the fat - add 2 sheets, grease, add the stuffing, spinach, 2 sheets, grease, stuffing, spinach and finish off with the pastry sheets.
Wrap the edges protruding from the pan inwards, cut the filo pastry into pieces and drizzle it with the remaining fat.
Make a topping from the 5th egg and 1 and 1/2 cups of sparkling water.
Bake the spinach filo pastry at 356°F (180 degrees) until it's ready.
