How to cook
Wash and cut off the top bit of the zucchini. Cut them into about 0.6″ (1.5 cm) thick beams. Dry them well. Pour the flour into a ziplock bag and put the zucchini in it.
Close the bag tightly and shake it to make the flour stick well. Beat the two eggs in a plate. Pour the breadcrumbs into a plate and mix them with the zucchini spice mixture.
Line a baking tray with parchment paper. Remove the zucchini from the bag and roll them in batches in the beaten eggs and then in the breadcrumbs with spices.
Arrange them in the tray. Sprinkle them with olive oil and parmesan. Bake them in a preheated oven at 338°F (170 degrees) for about 30 minutes or until they aquire a golden brown color.
