How to cook
Cut the meat from the sirloin thinly. Tenderize like you would a steak.
Put as a stuffing a thin piece of cheese. If you put ham in, smear it with mustard. It is folded in half.
Sprinkle it with black pepper and salt. Roll methodically in flour, egg, breadcrumbs and fry it in hot oil. When you remove it from the pan, put a piece of butter on top.
Serve with a salad appropriate for the season.
