How to cook
Knead a smooth dough from the products for the dough. Put them in the refrigerator, wrapped well in transparent foil, to sit for at least 30-40 minutes.
Then spread the dough out in a buttered dish, and cover its walls. Put it to bake in a moderate oven until reddened. For the filling, beat the eggs and mix them with the crumbled feta cheese and ham. Season it with parsley and black pepper.
Blanch the spinach briefly, pour cold water over it, drain and chop it finely. Add it to the stuffing. On top of the the cooked crust, arrange tomato slices and pour the filling for the spinach quiche. Sprinkle the top with grated cheese and put it to bake until ready.
