How to cook
The pork is tenderized well. All the spices for the marinade are mixed to homogeneity with wine and mustard. With this paste, rub the steaks and arrange them in a greased tray. Cut the eggplant and add salt to drain its bitterness for 20 minutes, then rinse and dry.
Heat some of the oil and fry the onion, chopped into crescents, until caramelized, also adding 2 pinches of sugar. Remove it and in the same dish, add the remaining oil in which you will fry the cleaned and sliced mushrooms, eggplant, peppers and at the end - garlic.
Season the vegetables with spices and place them over the meat in the pan. Add 2/5 cup (100 ml) of wine and put foil. Bake for about 1 hour and 30 minutes until the pork cooks. Finally, remove the foil and let it tan.
