How to cook
Choose large, fresh and juicy carrots and grate them on a suitable grater into long thin sticks. Put the grated carrots in a bowl, season them with cayenne pepper, ground coriander and let them season for 30 minutes.
Heat the olive oil and add the carrots to it. Crush the garlic with a pinch of salt, add it to the carrots with vinegar. Mix the salad and leave it for 3-4 hours in the refrigerator to get seasoned well.
