How to cook
Boil the chicken and cut it into small pieces, saving the broth. Fry the mushrooms in a separate dish. Fry the flour in the butter and gradually dilute with hot broth while stirring. Stir vigorously with a wooden spoon or a whisk, until you get a smooth mixture.
Separately beat the egg yolks with yoghurt. Mix them with the chicken and mushrooms and bring them to a boil for 15 minutes. Before removing from the heat, add the finely chopped garlic.
Sprinkle the Thracian chicken fricassee with black pepper, salt and parsley.
