How to cook
Whisk the egg yolks with the sugar into a foam, gradually add the almost boiling milk and strain it into a rinsed container. Heat the cream on low heat until thickened, without boiling it.
Mix the broken pieces of chocolate with 3 tablespoons water in a hot water bath until the chocolate melts, add it to the cooled cream, add the whipped cream and put it into a container for freezing.
Freeze it in the freezer.
