How to cook
The eggplants are cut in half lengthwise. The soft part is slightly cut. Season them with salt and leave them for 20 minutes.
Wash and place them in a baking pan. Sprinkle them with olive oil and bake them for 20 minutes.
Once they have cooled, carve them out.
Heat the oil in a pan. Simmer the finely chopped onions, carrots and garlic in it.
Add the minced meat and after it has crumbled, add the peeled and sliced tomato.
