How to cook
Debone the pork shanks and cut them into chunks. Sprinkle with spices well and stir a little to get them distributed evenly over the meat. Cover it and let it stay in the fridge for 1 day. The next day, fry it evenly in preheated oil.
Clean and chop all the vegetables coarsely, leaving the garlic cloves whole. Put them into a tray and season them with the spices as well. Distribute the meat on top and lightly mix.
Add 2/5 cup (100 ml) wine and wrap everything in foil. Put the tray to bake in a highly heated oven for 30 minutes. Then reduce and bake until done for 1 1/2 hours.
Remove the foil and check if the pork is ready. If necessary, bake it some more.
