Provence-Style Potatoes

  • potatoes - 2 lb (1 kg) half boiled
  • butter - 1/2 cup (125 g)
  • feta cheese - 2/3 cup (150 g), grated
  • cheese - 1.5 oz (50 g), grated
  • eggs - 6
  • tomatoes - 5 - 6 pieces
  • salt
  • black pepper


Peel the potatoes and grate them on a coarse grater. Melt half the butter in a pan and add the potatoes to it. Salt and sprinkle it with ground black pepper.

Remove the pan from the heat and after the potatoes cool, add feta cheese and beaten eggs. Stir gently and transfer them to a buttered baking dish.

Arrange tomato slices, and grate cheese on them. Top evenly with the remaining melted butter. Bake the Provence-style potatoes to a nice tan in a moderately heated oven.
